Healthy Carrot Cake Muffins

Ingredients:

½ cup of almond flour

½ cup of coconut flour

1 teaspoon of cinnamon

½ teaspoon of nutmeg

Pinch of salt

½ teaspoon of baking powder

1 egg

½ cup of brown sugar

½ cup of vanilla yoghurt (suggestion to use fat free Greek if possible)

1 ¼ spoons of vanilla extract

½ cup of grated carrots

1/3 cup of crushed pineapple

¼ cup of chopped pecans

¼ cup of raisins (optional)

Instructions:

  • Preheat oven to 400 degrees Fahrenheit or 200 degrees Celsius
  • In a mixing bowl add Almond flour, coconut flour, cinnamon, nutmeg, salt, and baking powder.
  • In a separate bowl mix eggs, sugar, yoghurt, and vanilla.
  • Mix dry and wet ingredients together and then add in carrots, pineapple, pecans, and raisins.
  • Put in muffin pan. Careful not to overfill each one as it will rise. The recipe should make about 6- 8 muffins.
  • Bake for about 20-25 minutes.
